My favorite asparagus recipe

For some reason I could not post in the asparagus thread above.

Roasted Parmesan Asparagus

1 Tbs. olive oil

1 Tbs. dry white wine

1 Tbs. vinegar

3 garlic cloves, finely minced

1/4 tsp ground herbs de Provence

Coarse salt and freshly gr. pepper

1 -1/4 lbs. asparagus

1/4 cup or more fresh parmesan, grated

Arrange asparagus in a a single layer on ovenproof pan (wash and snap off tough ends, first)

Make marinade and pour over spears, turning to coat. Let marinate for a few hours.

Preheat oven to 400°

Sprinkle about 1/4 cup or more of fresh grated parmeson over asparagus

Bake for 15 -20 monutes until lightly browned and hot, Garnish with lemon wedges

 
Karen, this looks good. I love roasted asparagus too. Here's my favorite cauliflower recipe....

it's from the red and white checked cookbook of old.

Cheese-frosted Cauliflower

Par cook a whole head of cauliflower (leaves removed) in boiling water. Be careful not to overcook, cauliflower gets mushy when overcooked.

When the cauliflower is done, remove it from the boiling water and place on an dish that's ok to put in the oven.

In the meantime, stir together some mayonnaise and just a tad of plain yellow mustard. You don't want too much color in your sauce.

Spread it over the cooked cauliflower. Grate some cheddar cheese and 'paste' all over the cauliflower and sauce.

Place in oven just long enough to melt the cheese and barely brown.

 
Yes Marsha, I use that recipe also and it is delicious. I add the mustard >>>

until it is pale yellow. Yum! And I steam it. I don't think the roasting would be right for this.

Amount Measure Ingredient -- Preparation Method

1/2 cup mayonnaise
1 tablespoon mustard
1/4 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco sauce
1 cup cheddar cheese -- grated

STEAM WHOLE CAULIFLOWER TIL ALMOST DONE. COMBINE MAYO, MUSTARD, WORCESTERSHIRE AND TABASCO. COVER DRAINED CAULIFLOWER WITH MAYO MIXTURE, THEN CHEESE.
BAKE UNCOVERED AT 400 DEGREES FOR 10 MINUTES.
