Roasted Vegetable Medley

Roasted Vegetable Medley


4 cloves garlic, minced
3 Tbs white balsamic vinegar
1 tsp sugar
1 tsp salt
1/2 tsp freshly ground pepper
1/3 cup olive oil
1 lb Brussels sprouts, quartered
2 cups baby carrots
2 parsnips, cut into 1/2-inch slices
1/2 head cauliflower, cut into florets

1. Combine first 5 ingredients; whisk in olive oil in a slow, steady stream.

2. Place Brussels sprouts and next 3 ingredients in a lightly greased
aluminum foil-lined 15- x 10-inch jelly- roll pan. Drizzle with vinegar
mixture, tossing to coat.

3. Bake at 400° for 45 minutes or until vegetables are crisp-tender and
lightly browned, stirring every 15 minutes.

 
I'm making a version of this on Wed for dinner wth friends. Adding some moose chorizo. Serving

Double baked potatoes and cucumber salad and maybe some asparagus from Costco. I think I'll bake up some Symphony brownies

 
Seems to me that just adding a few things to regular catsup would work

chopped jalapeños, I would add a little onion. Might need a touch of citrus. How could it be bad?

 
I have tried both of these ketchups: Ketchipotle and Ketchipeno. . .

Ketchipotle reminds me of sweetish, smoky, a little zingy bbq sauce. Ketchipeno reminds me of a somewhat hot, jalapeno-smelling ketchup.
