> ingredients
3 tablespoons butter
4 tablespoons flour
1 cup milk
1/2 pound feta cheese crumbled
3 ounces kefalotiri or Gruyere grated
2 eggs, beaten
1 tablespoon parsley,finely chopped
1/4 teaspoon grated nutmeg
1/8 teaspoon pepper
Melted butter
1/2 pound phyllo sheets preparation
Melt the 3 tablespoons butter, add flour, and stir. When mixture starts to bubble, remove from heat and gradually stir in milk. Cook, stirring constantly,until smooth and thickened. Empty sauce into bowl, add cheese, eggs, parsley and seasonings.Mix well. With melted butter and phyllo sheets, prepare triangles.Bake in a 425 degree F. oven for about 20 minutes or until golden brown.
