There was an article in Garden and Gun about the award winning "made in the South" Duck Fat Caramels. Well, how good would that be. I have bacon fat (a quart!!) from making bacon jam so will make some caramels. AND I think I might have some smoked salt to sprinkle on top. As Ina would say, how easy is that!!

Charley, they sound delicious......

and I must add I find your reference to Ina very sweet. I have observed many crude remarks made by men about Food Network women chefs/cooks that I found to be very disturbing. I have never found that on this site.

Me too, and I have to wonder about the folks who say rude things about people like Ina, Giada and

even Bobby Flay... and others, as I am picturing them (the Food Network stars) making their bank deposits. I heard on a talk show this morning that many of the young people going to culinary schools want to be on the Food Network when they graduate. Of course, they are told it does not work that way. Your have to pay your dues. Start working the restaurants, and getting your expertise, and experiences first.

No one is forced to watch them or buy their cookbooks. There's a great invention....channel changer.

Negativity runs rampant on some sites...

It is so easy to say negative, hurtful things about someone when you are protected by anonymity. These people are rather cowardly and unproductive. All they inspire is more negativity.
