My freezer has been breeding bags of "fresh" cranberries - what to make? I need the freezer space!

Apparently for the last 900 years every time I buy a bag of cranberries to make sauce, I buy an extra bag for something "later." And they've bred like rabbits in the freezer. What the heck?! So, I've got, shall we say, lots of cranberries.

What the heck do I make with them? Recipes encouraged.

 
Charlie posted a terrific recipe for cranberry scones. Doesn't use much of that rabbit offspring

but it's a start. And they are yummmeee.

Cranberry Scones Charlie 375 deg

1 3/4 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup yellow cornmeal
2 t. baking powder
1/4 t. baking soda
1/4 t. salt
2 tablespoons chilled butter -- cut into small pieces
1/2 cup cranberries -- halved
1/2 cup low-fat buttermilk
1/2 teaspoon grated orange rind (I like it with lime)
1 large egg -- lightly beaten
Cooking spray
1 teaspoon powdered sugar

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (flour through salt) in a bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Add cranberries, tossing to coat.

Combine buttermilk, rind and egg; add to flour mixture, stirring just until moist (dough will be sticky).

Turn dough out onto a lightly floured surface, and knead lightly 5 times with floured hands. Pat dough into a 7-inch circle on a baking sheet coated with cooking spray. Cut dough into 10 wedges, cutting into, but not completing through, dough. Bake at 375-degrees for 30 minutes or until golden. Sift powdered sugar over scones; serve warm.

 
Ya ya. Here it is. This is SO good.

CRANBERRY PECAN SALAD

1 tbsp balsamic vinegar
1 tbsp apple cider vinegar (I used raspberry vinegar)
2 tbsp maple syrup
2 tbsp soy sauce
1 tsp. minced shallot
1 tsp. minced garlic (or a little less)
1 tsp. Dijon mustard
1/2 cup olive oil (original recipe called for 1 cup which I thought was too much)
1/2 cup lightly toasted chopped pecans
1/2 cup dried cranberries
salad greens to serve 8 (about 1 bag mesclun mix OR can use hearts of romaine lettuce)

Gently swish salad greens in cold water put through a salad spinner and into a salad bowl. Cover with plastic wrap and put into refrigerator. Put first seven ingredients into a small bowl and stir. Just before serving, add olive oil to above ingredients and emulsify (I used a wire whisk to incorporate oil well). Toss salad greens with cranberries, nuts, and dressing and serve.

And I've done this with fresh cranberries. Almost as good.

Maria, those same rabbits have been visiting my freezer too! I keep finding bags of them everywhere

and I too need some space for a HUGH batch of roasted tomato soup for winter lunches. Thanks for asking this question. And thanks to all those who shared recipes, I have copied more than a couple. I think the pork chops will be the first up as I happen to have a big bunch of chard in the fridge!

I can get 5 to 6 mini-loaves from this.

Brother Rick's Orange Cranberry Bread

Recipe is from a Jesuit brother who is an ace baker. It's a winner--ideal for the festive season and for taking as a hostess gift. The cranberries can easily be chopped in the food processor.

3 1/2 cups all purpose flour {875 mL}
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 cup butter, at room temperature
1 cup granulated sugar
4 tsp. finely grated orange rind
2 eggs
2/3 cup orange juice
2/3 cup milk
4 oz. (120 g){2/3 cups/150ml} dried
apricots, chopped
3/4 cup chopped walnuts
3 cups fresh or frozen cranberries, chopped

In bowl, combine flour, baking powder, baking soda and salt.

In separate large bowl, cream butter, sugar and orange rind until fluffy. Beat in eggs, one at a time, until smooth. Beat in orange juice and milk.

Stir in flour mixture to form a stiff dough. Fold in apricots, walnuts and cranberries just until combined.

Spread batter evenly into 2 greased 8 x 4-inch loaf pans (or 4 smaller pans). Bake in preheated 350 F. oven about 1 hour (45 minutes for small loaves) or until toothpick inserted in centre comes out clean. Turn out onto rack to cool completely. Makes 2 medium or 4 small loaves.

We should get our cranberry breeding freezers checked out.

That's clearly irresponsible breeding and the manufacturer should be held responsible!
