My goodness: Costco Roaste Chickens--the best chicken soup! . . .

Yesterday my sister made chicken soup from roasted Costco chickens purchased the day before; she bought the biggest chickens they had. She pulled the meat off the bones and set it aside. Then she cooked the bones in water, along with all the juices in the bottom of the chicken containers with some onions, carrots and celery. Just before serving she added the chunked chicken.

Holy Moly, was it good. It was rich flavored, and really flavored the noodles. I ate a big bowl and so did everyone else.

When we left, my husband even told my sister that the chicken soup was good--and that is something from him!

I think next time I get whole chicken on sale I will buy a bunch and then roast them and then freeze them in their own juices for later soup! I think that roasting really improves the flavor.

 
I always make stock from the leftover bones, skin, etc.....

sometimes I cheat and buy these to make the Buffalo chicken dip and we think the meat gives it a little more flavor than just poaching a chicken and starting from scratch. But you are correct, the flavor in these babies is great and at the cost of them, you can't hardley buy them much less roast them yourself any cheaper. Not sure what seasonings they use but it's good!

 
Use the carcass to make broth, even if there is no chicken left. I use it for split pea soup

or lentils or any beans.
