Serbian Butter Cookies (ZemiCka)
(Marilyn's note: This is a staple during the Serbian Orthodox Christmas holidays, celebrated on January 7. Try and use a good European butter (Plugra, Lurpak, Kerrygold, etc) as it carries most of the flavor. Recipe does not mention how many it makes, but with 5 cups of flour, it will make A LOT. I've added the Serbian words by searching online...the recipe book didn't include any. )
1 pound (16 oz) butter (Serbian word for butter: puter)
1 C sugar
2 eggs, separated
5 C flour
1/2 lemon, zested then juiced
1 teaspoon baking powder
Topping
1 C chopped walnuts (Serbian word for walnuts: orah)
1 TBL sugar
1/4 teaspoon cinnamon
Cream butter and sugar for 3 minutes, then add slightly beaten egg YOLKS. Add lemon juice and grated lemon zest. Add baking powder to flour and stir in by hand. Wrap in plastic and chill for 2 hours (to re-harden the butter).
Preheat oven to 350 degrees.
Divide dough into four pieces and roll one piece out to 1/4" between sheets of waxed paper to keep the dough from sticking. Keep the rest of the dough in the refrigerator. Cut with cookie cutter and move to cookie sheet. Brush with beaten EGG WHITE, sprinkle with nuts that have been mixed with 1 TBL sugar and cinnamon.
Bake for 15-20 minutes or until slightly brown around edges
Wait five minutes and then remove to cooling rack.
Continue to roll each batch of dough until you have enough cookies.
Will keep for weeks.
