From my dear great grandmother Mary Etta Hile Roush. Great niece of Steven Foster. I was so privileged to know this amazing woman. She was born in 1898, earned her teacher's certificate, and then couldn't teach because she got married. She was a brilliant woman and I would sit and talk with her about all sorts of esoteric subjects (the three forms of Greek love, the Renaissance, the early days of the colonies, living in the early days of Ohio, it was all fair game and I was 10 years old).. She died my freshman year at Ohio State. I will never forget that phone call.
12 large beefsteak tomatoes
6 large white onions
1 pint white vinegar
1 cup sugar
1 tablespoon cinnamon
1 tsp. ground cloves
1 tablespoon black pepper
Grind the veg! Put it into the big pot with the vinegar and sugar. Bring to a boil and add the spice. Lower heat and cook until thick, always scraping the bottom of the pot. Seal and process in canning jars.
I have many more of these old recipe if anyone is interested. I learned to cook in my Grandmother's kitchen. Before she died, I sat with her and she dictated the recipes to me.
