From a mix, but given her hate (maybe that's too strong of a word) for baking... not bad. DH heard this and requested it for his birthday cake next week.

She's using toasted macadamia nuts instead of toasted coconut (I think the coconut extract will give it enough mild coconut flavor), and is planning on coloring the whipped cream/Cool Whip a light yellow.

Also having ham, pineapple, cantelope, kiwi, and strawberry kabobs stuck into a pineapple, vegetable sushi (I'm making that), soy-ginger chicken satay, and Hawaiian-Polynesian meatballs. And maybe a small bowl of poi if she can find it. Served with ? - okay with raw vegetables/crackers, or should she stick with kalua pork? I think she'd like to serve it with fish, but won't do raw salmon.

She and 5 friends are going to Hawaii in a couple of weeks. Yes, it's

this weekend and she's got the leis, pineapples, the Hawaiian music from Rhapsody, and even little drink umbrellas all ready to go.
