My new favorite chocolate...

Meryl, have you tried Mast Brothers Chocolates?

We just visted their shop in Brookyn where they grind the beans, create the chocolate, make candies, and offer their flavors for sale (with samples).

We bought several, can't remember all the ones we bought, but it was about the most intense chocolate I've had. The smoked cacao bean vanilla was especially intriguing. I had never heard of a chocolate maker smoking the cacao beans before grinding!

We bought these 3:

Papua New Guinea Dark Chocolate (71% Cacao): "After harvest, these beans are uniquely smoked. This post-fermentation process imparts incredible flavor: think hickory smoked bacon and aged scotch." (Ingred: Cacao, cane sugar)

Like no chocolate I've ever had!

Dark Chocolate Vanilla & Smoke (71% Cacao): "Smoked cacao from Papua New Guinea and bourbon vanilla bean from Madagascar are slowly stone-ground over the course of days and then aged." (Ingred: Cacao, cane sugar, vanilla bean)

This was my favorite of their chocolates that I tasted.

Dark Chocolate Dominican Republic (73% Cacao): "Organically farmed and shade grown under the canopy of banana and citrus trees. Notes of fresh cherries, molasses, and strawberry." (Ingred: Cacao, cane sugar)

We got big blocks of this one for dessert making. Very complex and would make wonderful mousse, ganache, etc.

Next time you make it back to NYC it's worth a visit to see their workshop. And, so conveniently, there is a very authentic German Biergarten to sit and rest a spell right next door to them.

Mo we took the L train to the first stop in Brooklyn (Bedford Ave) and it was

about a 5-6 block walk from there. Great grilled artisanal sausages next door (and beer!) at the Radegast Biergarten.
It's a fun little outing out of Manhattan.

 
No, the chocolates are very crisp/brittle since they're just cacao and sugar...

But with the amazing depth of flavor, we can't wait to try these in some desserts.

 
It could also have to do with the conching time, but the lack of added cacao butter sounds like

the main reason.
