ISO: My New Years Resolution (ISO yeast bread rec) & Weekend 6

Okay, so I figure your new year starts on your birthday and I just turned 47 on Thursday (and oh yeah, DH & DD forgot, he did remember after dinner finally, she still hasn't - was too wrapped up in prom madness). So one of my new years resolutions is to master yeast breads and feel completely comfortable making them with and without recipes. It's not that I have flopped at them, I just haven't done much with them and yet it might be my favorite part of a meal, good hot yeast bread. I grew up eating corn bread and biscuits. So I have a batch of focaccia dough made right now but I want to make at least one loaf of a yeast bread each week so I need your favorite yeast bread recipes.

Weekend six:

1) Volunteer super Saturday - my company was working with Operation Stand Down/Home for Heroes/Rebuilding Nashville as part of our Heery from the Heart Community Service month. So I stared out the day working at the house of this wonderful retired military veteran. She has asthma and just can't keep up so we did stuff inside and a LOT of work in her beautiful flower beds. Very good feeling to do something for this wonderful lady who gave to us.

2) From there I ran to Earth Day Festival to work in the Friends of the Farmers Market booth. Lots of fun - serving up local food and a chef that just moved here from Napa made a wonderful panzanella salad as well as strawberries that were marinated in red wine, balsamic vinegar, orange peel, star anise, cinnamon sticks, black cardamom.

3) Help DD get ready for her prom - it started at 8, she got home from getting her hair and nails done after 9. She wasn't sure sh was going but got a last minute 'date' on Wednesday then he got grounded on Thursday night so she rather cheerfully just decided to go by herself and even if she is my daughter, she looked great (pix on FB).

4) First of my new years resolution breads rising now

5) Cleaning house - little cousin that got his residency/intership at Vandy is coming up with his fiancee on Tuesday to loko about buying a house

6)Going to make time for myself every day - another new years resolution. Going to work out with my AeroPilates and get in better shape (doing that work yesterday morning was the tell tell sign I was out of shape!) for one. So many things I want to do, so little time.

OH and we are moving offices - I've been packed and ready since Thursday but they aren't actually moving our stuff until tomorrow so that is going to be fun.

 
Happy Birthday! Here are a couple of recipes:

Sally Lunn bread is luscious hot with butter and makes the most terrific toast:

1/2 cup warm water
2 packages active dry yeast.

1/1/2 cups lukewarm mik
2 tablespoons sugar
1 1/2 tsp salt
2 eggs
1/4 cup soft shortening or butter
5 1/2 cups flour.

Dissolve yeast in warm water. Add remaining ingredients and beat until very smooth. Cover and let rise until very light (1 hour or so). Beat down batter and pour into greased 10 inch tube pan. Let rise until 1 inch from top of pan. Bake at 350 for 45 to 50 minutes until golden brown & crusty.

Batter Bread

1/4 cup sugar
1 tbsp dry yeast
1 1/2 cups warm water
2 eggs
3 1/2 cups flour
1 cup rolled wheat (wheat flakes) plus more to sprinkle on top
1 1/2 tsp salt
1/2 cup dry milk
5 tbsp melted butter, plus more for brushing top.

Dissolve sugar and yeast in warm water. Beat in eggs then butter. Stir together dry ingredients. Slowly beat in to liquid ingredients. Pour in well greased 9" square pan. Sprinkle top with some of the wheat flakes. Let rise until doubled. Bake at 375 for approximately 30 minutes. Brush top with butter while still warm. Cut in squares and serve warm.

Buns

Nice soft tall yeasty rolls:

2/3 cup sugar
2 tsp salt
2 tbsp butter
1 tbsp lard (or additional tbsp butter)
2 cups boiling water
2 eggs, well beaten
1 cake yeast
1/2 cup lukewarm water
8 cups flour.

Dissolve yeast in 1/2 cup lukewarm water. Combine sugar, salt butter, lard and boiling water in large bowl. Stir to mix. Cool. Add eggs and yeast mixture. Gradually mix in flour then knead well until smooth and elastic. Let rise until double. Punch down. Let rise 1 hour. Form in largish balls and place in pans (13X9 works well) just touching. Let rise two hours. Bake at 400 for 15 minutes. Brush tops with butter while still warm. Yields 3 dozen.

I had the exact same NYR for a few years, until I finally went for it, in 2008. Even though the resolution was for the New Year, I only started on my Birthday, which is in March. So, in a way, we are on similar paths (I had turned 48 then).

As far as favorite bread recipes go, I need to ask if you have Bread Baker's Apprentice, because if you do, I can tell you my favorite recipes from that book as a starting point.

Your bread is making mom and me drool, we are perusing the swap together right now. By the way, your daughter is simply lovely in her prom pictures. Regardless of her special event today, we both agree that she shouldn't have forgotten your birthday. No brownies for her this week!!! Hugs and hope you have a fun day and that *everyone* makes it up to you in grand style, especially after you gave so selflessly of your time this week.

 
Belated birthday wishes and how nice to be involved in the Rebuilding Nashville efforts. My six were

- trying to get over a sore throat - ugh

- had couscous and scrambled eggs for breakfast Sunday, very soothing for the throat!

- looked for the cord to charge our electric lawnmower (oh no, I hope it isn't lost for good)

- got together ingredients for a marinade for basting another ham that will make tonight, Monday

- went to a bakery outlet and found 30 - count them, 30!! - sesame seed rolls in a flat package for $1.19. Froze most. Sloppy joes with 6 of them. Mmmm, good.

- movie night Friday with a couple of friends - watched The Bucket List (sniff, sniff). Cheesey popcorn and margaritas - it was a good night.
