My Saturday Six Cookies!

We went to the annual church cookie-walk yesterday and I spent way too much. At $8.50 per lb, that's not hard to do.

If anyone wants any of these recipes, I'll be happy to post. Here are the ones that I head for as soon as I get there:

-Fudge-Filled Sliced Cookies

-No-Bake Krispy Date Balls

-Cinnamon-Flavored Puff Sugar Cookies (I accidentally only got ONE! The horrors!)

-Lime Melt-A-Ways (Martha Stewart's recipe)

and this year, 2 new ones:

Reindeer Pops - Nutter-Butters impaled (!) on a stick, then dipped in chocolate and decorated with pretzel antlers, eyes, and a cinnamon-heart nose

Pretzel Bites - star-shaped pretzels topped with a candy kiss and a red M&M

 
Aw, the reindeer pops sound cute. I'd love the recipes for the first two, if you have time! smileys/smile.gif

 
Oh, I think the melted snowmen are the cutest ones! Will post recipes tomorrow. Yes,

Marilyn's link is what my reindeer look like. I see the pretzel ones there too. I've gotta get out more! I had never seen star- or square-shaped pretzels before now.

I think my main stumbling block is: why would a melting snowman be smiling?! (Clearly, I have too much time on my hands.)

 
Time on your hands...I think that will soon come to an end. Enjoy it whilst you can. I'm thinking

you must be very close to having that baby.

 
Cinnamon-Flavored Sugar Cookies

3 cups all-purpose flour
1 1/4 teaspoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter
3/4 cup sugar
1/4 cup cream cheese
1 teaspoon vanilla extract
1 large egg

Frosting:
Your favorite vanilla frosting recipe to which is added 1/2 teaspoon cinnamon-flavored extract and a few drops of red food coloring

Preheat oven to 375°F. Line 2 cookies sheets with parchment. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream together the butter, sugar, and cream cheese until light and fluffy. Beat in cinnamon extract and add egg. Add the flour mixture and mix at low to medium speed until the mixture is evenly moistened.

Roll dough between hands about an inch in diameter and place on cookie sheets, leaving 2" between them. Using a flat-bottomed glass, flatten the cookies slightly.

Bake for 15-18 minutes or until slightly browned around edges, then remove from the oven and cool on the pan for 5 minutes. When completely cooled, frost and sprinkle red or green sugar on top. Pretty!

 
These are also very good cinnamon cookies, slightly different

1 cup butter, softened
1 cup sugar
1 cup confectioners' sugar
1 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
4-1/3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon ground cinnamon
1 cup finely chopped toasted almonds pecans, optional
colored sugar, optional

In a large bowl, cream the butter, sugars, and oil. Add eggs and vanilla; mix well. Add flour, salt, baking soda, cream of tartar, and cinnamon. Stir in nuts if desired. Cover and refrigerated for 3 hours or until easy to handle.

Roll into 1-in. balls and place on greased baking sheets; flatten with the bottom of a glass dipped in sugar. Sprinkle with colored sugar if desired. Bake at 375° for 10-12 minutes or until set. Yield: about 8 dozen.

 
No-Bake Krispy Date Balls

1/4 lb walnuts (finely chopped, toasted, divided)
1 cup dates (pitted chopped)
1 cup Rice Krispies, crushed
1/4 cup honey

Place one half of the walnuts and the remaining ingredients in a food processor and pulse until blended. Roll into balls and then coat in the remaining walnuts.

 
Fudge-Filled Sliced Cookies

1 cup butter, softened
1 package (8 ounces) cream cheese, softened
2 cups all-purpose flour
2 cups (12 ounces) semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
2 cups chopped Diamond of California® Walnuts (I omit)
Confectioners' sugar, optional (I omit this too)

In a large bowl, cream butter and cream cheese until light and fluffy. Gradually add flour and mix well.

Turn onto lightly floured surface; knead until smooth, about 3 minutes. Divide dough into fourths; cover and refrigerate for 1-2 hours or until easy to handle.

In a microwave-safe bowl, melt chocolate chips and milk; stir till smooth. Stir in walnuts. Cool to room temperature.

Roll out each portion of dough onto an ungreased baking sheet into an 11-in. x 6-1/2-in. rectangle. Spread 3/4 cup chocolate filling down the center of each rectangle. Fold long sides to the center; press to seal all edges. Turn over so the seam sides are down.

Bake at 350° for 27-32 minutes or until lightly browned. Remove to wire racks to cool. Cut into 1/2-in. slices. Dust with confectioners' sugar if desired. Yield: 3 dozen.
