My sister & I are on a mission to recreate the 85C Bakery cranberry buns

I have the ingredients list & we have been looking at Japanese method bread recipes. The website identifies the buns as having been made from their Yudane dough. Have any of you made Yudane method or Hokkaido milk bread? Tried & true recipe?

Love challenges! No T&T, but the linked method is very similar to my mom's sweet bread

Mom just brought the starter to a slow bubble...didn't cook it as long as this recipe indicates. Also she used fresh yeast, but never used bread flour. I don't even know if "bread flour" existed as a grocery store product when I was growing up in Pittsburgh.
