My sister (the artist) bought 11 Hachiya persimmons and now needs good recipes for them.

There are many recipes for persimmon pudding, though I've never found one I really like. You can

also freeze the ripe persimmons whole, then let them thaw in the fridge enough to be able to peel them, and you have instant persimmon gelato. I just did this last night with diced mango. Or your sister can simply eat them fresh and lick the juice off her fingers.

 
I think she wasn't keen on them "straight" what do you think about a smoothie? Or a roll cake?

I've been looking for something like this but no dice. Maybe adapt a pumpkin roll, after draining the puree overnight to reduce the moisture? I'm thinking a cream cheese filling with candied orange peel?
