My son went shopping for me for corn on the cob that is on sale now in

our supermarkets. I have found the Florida corn sold this time of year to be as good or better than corn sold in the summer, mainly because they refrigerate it immediately for shipment.

Gonna cut from cob and freeze for the holidays.

Lucky you!! Finding the corn I froze last summer to be such a treat!

Along with the tomatoes I roasted using Karen's method. Still have frozen Ottolenghi's Sweet Corn Polenta to defrost and "finish". No eggplant but thinking of making a COVID ratatouille to serve with it. But not this week smileys/wink.gif

Just finished it and it is absolutely lucious. Boiling the cobs now for some

broth for soup.

Charley, what kind of soup did you make from the cob broth, don't know why I have never thought of

that. I toss out the cobs and have often thought, what a waste!

I've made corn chowder before but never thought to use the cobs for anything. I'm definitely going to try it. I looked for recipes and found this one.
