If you have a dehydrator, try drying some. Rinse and pit first. Dry whole. They turn out like tart

raisins. Very yummy.

 
Send them to me! Make a pie smileys/smile.gif You can also pit and freeze them.

And Meryl is right, they make great preserves. My mom used to make an apricot/cherry combo - still my favorite to put on toast.

 
Can anyone tell me how to pit this many cherries? There has to be a faster way than by hand.

I cooked them with water this morning and made a chipotle cherry basting sauce. It turned out pretty good, and I didn't have to deal with the pits. I just simmered the fruit with a little water and then pressed them through a sieve. I would love to do more with them, but I just cannot imagine pitting all of these manually. Thanks!

 
Dawn, if you don't have a cherry pitting device then do this:

score the cherries quickly with a knife. Then smash down on them using your hand and a large flat-sided kniife. It is like pitting olives.....same thing. You should be able to easily take the pits out. It's what we did in the "old days". Patience is a virtue.

 
we used to spend evenings around the table or watching movies and pitting cherries -

sometimes with a pitter, and sometimes just by hand, depending on what we were using them for.

It is is chore, but the end results are worth the effort.

I had no idea growing up how wonderful it was to have a sour cherry orchard in our back yard, along with apples and apricot trees.
