I actually went out Fri. morning to purchase some stuff from the greengrocer and dragged myself back hardly breathing from the heat. There were heat warnings up for the weekend it was so bad and requests from the electric co. not to use stuff from 12-5 pm

Made deep dish plum pie from a recipe and picture that I have been looking at for years.

It was as good as it looked! Going to finish off the pan right after this post.

Made an easy meat and spinach dish that took no time at all and was yummy.

Made caprese salad for starters and for granddaughter who loves it. Got some good bufalo - too.

Then panicked that there wasnt enough and so made corn soup.

Finished cooking now for a few days!!

The heat just broke today - it's still very hot but one can breathe.

 
My weekend six

1. I am thinking about making the popular blueberry bars only with frozen raspberries that I need to use up.
2. I think I am going to make some fried rice for dinner. Use some of the bacon and add some shrimp.
3. Surprised my son with a Lego board game set. I went to Target and got a few things. I brought in two bags and asked him to put the root beer in the garage fridge. He let out a big sigh (he isn't feeling up to par today). I propped the Lego box against the root beer in the trunk. He came in the house all smiles. Yay!
4. I have a lot of bread, cheese and eggs leftover from the FM, I think some breakfast stratas are in order. Can they be frozen?
5. I need to use up some pork and beef stew meat today. I can't really think of anything that would use both at the same time. Oooh, I just remembered a goulash recipe that calls for either meat. I also have two green peppers to use up and can serve it over my little new potatoes; dinner tomorrow night.
6. I have been drinking my water out of a wide-mouth quart canning jar with a plastic lid on it. I fill it up with ice then water. It stays really cold for a long time and I am drinking a lot more water because it is ice cold.

 
Dawn, for the combo beef/pork this is very good:

A guy I used to work with made this and brought it to work several times and it was so good. This is a loose recipe and NOT New Mexico style. Adjust ingredients to your taste.

3 pounds of pork roast cut in largish cubes
3 pounds of beef chuck roast cut in largish cubes
2 chopped onions
a few tablespoons of minced garlic
2 bottles of beer (or more)
1 pound( or more) of roasted, peeled and diced green chiles
1 tsp of oregano
1 tsp of cumin
salt & pepper to taste

Sear the meat and onions. Add remaining ingredients. Simmer until meat is very tender.

Serve over fritos with diced onion, tomatos, sour cream, diced avocado, etc.

 
A local Mom and Pops place that we go to sometimes

has an entree that has stewed pork and beef shreds in it. I'm sure it is cooked low and slow, and also has onions and guess what - green peppers - in it, all in a thick tomato-y pasta sauce.

I think they serve it with a side of pasta, but I don't really like the combo of meats together so I don't think I've ever ordered it, but it's a featured item on the menu, so others must!

Friday, baking more blueberry bars for a friend who was having a Tupperware-type party today. They were really good, but a little pale. No one knew what they were supposed to look like, and were eaten right up.

Yesterday went to the first annual Blueberry Festival here. I never saw blueberries as large as these (the size of a quarter, honestly) but only bought a couple pieces of blueberry tart - inspired, I went to an orchard and picked a couple more quarts.

The tart had a sweet, crisp (brittle) crust and I'm trying to figure out if they made it with puff pasty. Has anyone ever heard of a shell like this? It was very good, and went well with the smooth creamy filling topped with the humungous blueberries.

Made jerk chicken for dinner tonight... marinated chicken, grilled, and topped with fresh pineapple chunks, strawberries, and almonds. Very refreshing!

I froze the leftover creamy enchildas individually the other night, and thawed them for lunch yesterday. They were even better the second time around, nuked and served with avocado slices. Low-carb and very tasty! It was one of those things that while you're eating it, you stop and think "Did I really make something this good?!" and it's good for me?! Getting a little sick of chicken though...

On the way home from the orchard I stopped at a tag sale and bought an antique rose bowl, a springy-type round wire whisk which I have come to find out is a "twirl" whisk, and a small wok. I had one a long time ago but haven't used one lately. Now I can't wait to make something in it. I wonder if I could use it to make omelets...

My weekend six

Last weekend for my Dad's visit. went to the practice Air Show on the Air Force Base on Friday. sad time for our Air Force "family" with the crash of the C17 this week.

the Blue Angels are still parked on the tarmac outside my office building. I love me some Air Show stuff!

Made 2 plum cakes(Marian Burros recipe) with Splenda and used a 9 inch pie plate. I find that baking with Splenda makes things drier than normal. I add a few tablespoons of sugar to the mix to help with browning and just for a bit of real sugar taste. maybe I should add some yogurt or sour cream for more moisture. they were good anyway, and more of a coffeecake than a dessert.

Saturday night baseball banquet at the University food service hall. A bit disappointed that they served frozen chicken cordon bleu. desserts were lovely though. apple tart and marble cheesecakes.

Put Dad on the plane for Chicago Sunday morning. I packed a small tote with lunch and magazines and his medicine---and yes, he forgot it on the plane. Alaska Airlines called me last night because of the medicine. We'll work it out today.

Back to work today after 2 weeks off, but I'm so very tired.
