My (weird for me) breakfast: Egg, kimchi and Jalapeno Velveeta tacos, . . .

3 street size corn tortillas, 1 egg + 2 egg whites, 3/4 tsp oil, 1 slice Jalapeno Velveeta, chopped "Hawaiian" style kimchi, Cholula Chipotle sauce. Scrambled eggs and whites, with oil in preheated pan, removed, turned off heat, heated kimchi briefly with retained pan heat, removed, then heated pan again and warmed the tortillas. Placed 1/3 slice Velveeta on each tortilla, topped with eggs, topped eggs with kimchi, placed all in hot pan to toast/warm briefly, then put on plate and topped with Cholula Chipotle sauce.

I looked at the mess and though that it was gonna be awful, but it was surprisingly good. I love kimchi, and Velveeta and corn tortillas are personal "soul foods", and the Cholula hit another personal favorite, smoky-hotness.

The Velveeta I like in limited quantities, as I find it very easy to eat, waaaaay too easy to eat, so the slices work well for me; limits the cheese caloric intake, while adding flavor that I like.

Weird but good.

 
OMG this sounds heavenly. I NEVER buy Velveeta because I could eat the entire brick!

The slices might be just the ticket for me to try this. Have you ever used the regular Velveeta and used fresh jalepeño pepper? Do you make your own Hawaiian Style Kimchee ?

 
Well, my sister and I are doin' Weight Watchers and she put me onto those Velveeta. . .

slices. 40 cal a slice, and they are not reduced fat. Taste-teee! It was amazing how that creamy flavor carried in each of the three tacos. Surprising, as there was only 1/3 slice on each taco.

Yeah, I have to keep brick Velveeta out of the house, the same reason as you. . .

Nope, have not used Reg Velveeta with fresh jalapeno.The jalapeno Velveeta slices are pretty mild and have minimal zing, but I can taste the jalapeno flavor, though I wish it were stronger.

I have made kimchi, but not the hawaiian style that I purchase. The kind I buy is Joe Kim's Kimchi (Won Bok). Pretty much mild, nice sour, not real smelly, just tasty, but it does use msg.

The slices work for me, but sometimes, who-ee, I could dig into more than one. Velveeta does give a nice creamy flavor when used with eggs in the tacos, very rich and does stand out well. I put it on the warmed tortilla then put the eggs on top of the cheese. Then I toast all in the pan to insure good melty-ness.
