Eggs Poached in Salsa with Beans

1 1/2 cups salsa (this one suggested Herdez Salsa Casera)

1 can black beans, drained

4 eggs

4 tablespoons grated monterrey jack or queso fresco

1/2 avocado, cut in four wedges.

Put 10 inch skillet sprayed with cooking spray on medium high heat. Spread 1/2 cup of the salsa evenly on bottom. Spread beans over salsa, then spread remaining salsa over beans. Top with 4 eggs, spread out so they don't run together. Cover and cook 7 - 9 minutes, or until eggs are desired doneness. Garnish with cheese & avocado. Serve with tortillas, toast or tortilla chips. 210 calories without bread. I think I'd like green salsa & pinto beans with this too.

Sorry Dallas Morning News- I would call this shirred eggs-not poached and it does sound good.

I can see I'll add chopped onions and Cilantro for my personal taste- I like the concept of cooking the eggs on salsa and beans.

 
This would be great for dinner on evenings when DH is out of town. It sounds easy, quick and good.
