Need an appetizer suggestion....can't come up with anything that I am not already tired of making

We are gathering with a couple other families for a very low-key, kid-friendly New Years Eve. We will be declaring Midnight at 8pm. The hosts are making a white chicken chili and a veggie chili. There will be hummus and crackers, guacamole and dip, a big salad and a bunch of pies from Costco for dessert. I have been asked to bring an appetizer. What makes sense with this menu? I am just coming up with anything.

Help!

Thanks

Kathleen

Another good one: Green Chile CHeese Spread

GREEN CHILE CHEESE SPREAD aka THREE CHEESE GREEN CHILE SPREAD

Note: It's ultra thick, so I thinned it out with extra sour cream and a little milk. Also, it's not hot/spicy, so I added more hot sauce and chili powder to taste. I omitted the Monterey Jack and used about 7 1/2 oz of cheddar, a mixture of Cabot extra sharp and Dubliner, plus I doubled the green chiles.

*Update: I tried it warm and prefer it that way, and it doesn't need to be thinned out.

A make-ahead cheese spread. Serve with corn chips, tortillas, or your favorite assortment of crackers.

GREEN CHILE CHEESE SPREAD

Ingredients:

4 ounces cream cheese, softened
1/4 cup sour cream (I used an extra 4 - 5 tsp)
1 cup shredded cheddar cheese (about 4 oz)
1 cup shredded Monterey Jack cheese (about 4 oz)
1 (4-oz.) can diced green chiles (I used 2 cans)
3 tablespoons sliced green onion (I used about 5 Tbsp, about 3 - 4 scallions)
1/2 teaspoon hot pepper sauce (I used more, to taste)
1/2 teaspoon chili powder (I used a little more)
1/4 teaspoon ground cumin (I used a little more)

Directions:

COMBINE cream cheese and sour cream in medium bowl. Stir in cheddar cheese, Monterey Jack cheese, chiles, green onion, hot pepper sauce, chili powder and cumin. Mix well. Refrigerate until ready to serve. *(Note: One reviewer served it warm - heated until cheese melted).

Makes 2 cups (mine yielded more, about 2 2/3 cups).

Traca, this looks awesome! I am keeping it to try!

Might even try it for NYE if we stay home. Yum!
Thanks!

Thanks for the ideas...a couple of questions

My husband is allergic to shellfish so the Bayless and the Lime Dip with shrimp will need to wait until he goes on a business trip (the boys and I eat shellfish exclusively when he is gone).

I am liking the pigs in a blanket idea. Do I have to cook the kielbasa first? It isn't a food I typically cook so I am not terribly familiar with it.

Thanks.
Kathleen

Get smoked ones that are already cooked. They will cook more wrapped in their wee little blankets.
