first sit-down course is sardines Venetian style, fried then marinated in onions, white wine, white wine vinegar, pine nuts and raisins. I'd like to use the same topping on something for the one vegetarian guest, but I can't get past half a roasted red pepper or lightly fried zucchini slices. (Can't use simple toast, because it follows mixed crostini, or tomato or eggplant, which are among the mains.) Whatever it is has to be low-effort and do-ahead. Does anyone have brilliant ideas? Many thanks.

 
Half a butternut squash, prepared ahead of time? Does it have to

be vegan? Yeah, probably, or else sardines would be ok...

Maybe spinach and mango salad?

Breaded and fried eggplant?

Polenta?

 
What about using tofu or tempheh for the sardines?

You could fry it or grill it also and then marinate it and use the same topping.

 
No, I'd wondered about that, but doesn't it have to be done right beforehand? What's room-temp

polenta like? I can't (won't?) cook anything for two or three hours before we sit down.

 
Can't you make them ahead of time and then pop them in

a tabletop/Forman grill/broiler or even the microwave right beforehand? IMHO I don't think room temp polenta would be good.

 
There's an idea. Maybe dig out my farro. Or dig out my

fish cookie-cutter for the polenta, haha.
