first sit-down course is sardines Venetian style, fried then marinated in onions, white wine, white wine vinegar, pine nuts and raisins. I'd like to use the same topping on something for the one vegetarian guest, but I can't get past half a roasted red pepper or lightly fried zucchini slices. (Can't use simple toast, because it follows mixed crostini, or tomato or eggplant, which are among the mains.) Whatever it is has to be low-effort and do-ahead. Does anyone have brilliant ideas?
