Need cookie decorating help, please.

I found you should never use a domed sugar cookie recipe if you plan on using cookie transfers. Had a heck of a time but I finally got them on. My problem is that at the bottem of each transfer it says "edible transfer" in black. I'd like to pipe icing over it (make a border). I need an icing recipe that I can pipe but that will harden somewhat so I can stack the cookies.

Have no meringue powder so that recipe is out.
