Need easy and inexpensive ideas for the next...

week. Had storm damage last week that took out my utitilites for several days and was a real ordeal. Had to throw everything in fridge away (freezer was salvageable) and spend lots of money I didn't intend to spend. I'm too worn out to think...what groceries do I buy and what do I cook for the next week-it's just for me-don't have to please anyone else.

 
When I am cooking for myself, I tend to eat a lot of eggs made in a variety of ways -

and salads. Or make a nice pot of soup and put some in the freezer for later.

Sorry to hear about the storm catastrophe and expenses! I sympathize. (Once, I was at my wits' end (and at the end of the month, before a paycheck) and ate the contents of my Storm Kit. smileys/wink.gif I don't recommend that... But it did force me to improve the quality of food in it!)

What's comfort food, to you?

For me, pasta fits the bill, with some chopped tomatoes and a grated carrot, sauteed with onion, olive oil, and butter. Simmer until thick.

If you like Indian food, dhal/lentils are usually inexpensive; buy them somewhere where the turnover is high. There's a link below to a very good recipe. (I can't vouch for the authenticity, but it is warm-potatoey-curry goodness. Also, the recipe makes quite a lot, but halving it is good for leftovers.)

Eggs, as Lisa said! Devilled eggs somehow seem delightfully decadent, to me; a good indulgence when you're solo, I think.

If you have a crock pot (or a lot of time to monitor a regular pot), cheap cuts of meat are good for making into goulash.

Chicken paprikas is easy and comforting: chicken + onions + sour cream + paprika.

Chicken soup can be made from chicken backs/necks (cheap, at the butcher's); throw in some root vegetables and water, and you'll have comfort food in a while.

But... I would give yourself a little leeway. If you have a farmer's market around, walking around there will help you find inexpensive, fresh things. Good way to relax, too... And there are usually a few stands at every farmer's market offering some good cheese or honey to indulge in. smileys/smile.gif You deserve it!

Oh boy this sounds good Erin, and I'm not a fan of curry powder, but will find some of the madras.

 
Super Nachos, fun wraps, something comforting in the crockpot like chili or basil tomato soup

with grilled cheese sandwich or Sloppy joes or BLTs are all things I like to make when alone.

 
Just a note on lost food,...when the East lost its power a few years ago, of course, freezers

had to be emptied. It was not until a few weeks ago, when glancing at my insurance policy, that I discovered that this exact type of loss was entirely covered with no deductible.
