I think you could sear them on the stovetop and finish in a

425* oven for an additional 10-12 minutes. Don't overcook or they will be dry.
Also, my tip for making a pocket for stuffed pork chops is to make the slit along the BONE side and form the pocket by cutting almost to the edge of the chop. The filling stays IN the chop that way.
