Need ideas for lunch tomorrow - I need something relatively simple

and for some reason my mind is just drawing a blank. We're going to the movies first then zipping to a friend's so I can cook lunch for 3. It can't be very lavish due to the budget this month.

What are you all making for lunch or dinner??

 
Would you like to fix a quiche and salad and maybe some green beans or asparagus?

Frittata? How about the tomato paella posted above? I find that even non-summer tomatoes work pretty well in dishes like this or tomato pie where the tomatoes are cooked.

 
Are you able to do any prep tonight, or tomorrow morning? And might there be

a grill available or a broiler? These Honey, Lime & Sriracha Chicken Skewers are marinating now for tonight's dinner and the marinade is absolutely delicious!!!! You could serve them with a couscous salad or spinach salad or coleslaw or black bean and corn salad or the Corn Salad with Avocado I posted yesterday or the Thai Crunch Salad with Peanut Dressing which I'm pairing them with tonight.

The marinade comes together quickly and you could get the chicken marinating in the morning then skewer and grill after the movies (if using wooden skewers you can put them in water to soak before the movies).

Other ideas for lunch that come to mind quickly: crepes or spring rolls or lettuce wraps or Traca's potsticker salad.

with rave reviews for both the salad and the chicken skewers. I'm still chopping up the veggies for the salad but the dressing is amazing (though I dialed back the sugar to 2 tbsp and might do even less next time....and there WILL be a next time)!!!

To save time and cost you could use a bag of the coleslaw mixed salad as one reviewer did.

Thanks everyone for the great ideas! I did do chicken, a saute over polenta

and it turned out that 2 more people came so fortunately my friend had more chicken in the freezer. I taught my little friend (10) to make the polenta and everyone was impressed.

I'm eeking it out till Friday's payday! Going to raid my freezer tonight and make crock pot chicken stock and see what else is lurking in there to eat the rest of the week.

I want to make all of the recipes you shared, printed for this weekend.
