Need knife advice - I'm looking at the Shun Elite Santoku

and was wondering if anyone had any opinions about Shun. I am also trying to decide if I want the straight edge or the hollow ground. I currently have a Wustohf hollow ground but the Shun elite does not come in that finish. Does anyone know the difference?

I love my 10" Shun Chef's Knife. After I bought it, read the reviews on Amazon, only complaint

anyone had, was price!
Maybe go there and check out the reviews of the Santoku.

I have the Shun Classic Santoku (not hollow ground) and I absolutely LOOOOVE it!

I have two santoku knives - the Wusthof Grand Prix hollow ground, and the Shun Classic non-hollow ground. I use the Shun for most of my chopping, dicing - love the heavier weight of it, and love the feel of the handle.

The D shaped, pakkawood handle is extremely comfortable in my hand (my hands are on the small-to-medium sized), and is heftier than the Wusthof Grand Prix.

But I'll use the Wusthof for slicing icebox cookies, because the blade is much thinner. The hollow ground also helps when I want to make really thin slices of stuff.

I don't have any of the Shun Elites, which have a prettier handle style, and a better steel. I read that the Elite does not have the D shaped handle that the Classic does (the D makes it better for right handers.)

Actually they come left or right handed, I am left handed, but the right is more comfortable to me?
