While at a graduation party last weekend, we had some bars that reminded me of something I had as a child but my mom does not remember what they were or how to make. The base was butterscotchy and crunchy...maybe cornflakes? Then they were topped with chocolate...guessing just melted chocolate chips. They were simple but delicious and I really want to make for my kids. Anyone know what they were or have a recipe?

Thanks so much.

Do Almond Roca Bars fit the bill?

Almond Roca Bars

1 cup butter/margarine
1/2 cup packed brown sugar
1/2 cup white sugar
2 cups flour
1 teaspoon vanilla
1/3 pound dark chocolate (Guittard's)
1/2 cup finely chopped nuts

Mix all ingredients. Press mixture in 11x15 cookie sheet. Bake at 350 degrees 12-15minutes. Melt chocolate at 50% power in the microwave 1-2 minutes and spread over baked dough. Sprinkle with nuts. Cut into bars while still warm.

My note

I found I needed more chocolate (1/2 lb) to adequately cover the shortbread.

I don't think so...

...the bars were really chewy and these appear to have a crisp shortbread crust. They sound good, though. I will have to make them at some point soon.

Still searching....

Try a search for "Dream Bars" : Maybe this is it?

Graham cracker crumb base, with melted butter poured atop, then atop this shredded, sweetened coconut, some sort of chopped nuts, sweetened, condensed milk poured over and topped with chocolate chips. Like candy in a pan. . .

Kathleen, I've run into a road block. All recipes I've found are either

drop cookies or have peanut butter or coconut in them or don't have chocolate icing.

Here's one that actually makes my teeth hurt. I'm still trying to figure out who thought of combining a "healthy" cereal with 2 CUPS of sugar and chocolate?

4 C Special K cereal
1 C sugar
1 C light corn syrup (Karo)
1 1/2 C peanut butter
1 12-oz bag of semisweet chips, melted.

Butter 11x15 pan and spread with cereal. Bring 2 sugars to boil, removed from heat, add peanut butter and pour over cereal, spreading evenly. Spread melted chocolate over top.

Chill 2 hours and cut into bars.

Seven Layer Bars

1 stick butter
2 C graham crackers, crushed
1 6-oz bag chocolate chips
1 6-oz bag butterscotch chips
1 4 to 6-oz bag chopped nuts
1 can Eagle Brand condensed milk
1 C coconut

Melt butter in 9x13" pan
Spread crumbs, then layer each ingredient.

Bake 350 for 30 minutes. Cool and cut into bars.

I think that is it....YEAH!!!!!

...for some reason I had in my mind they were butterscotch but maybe it was peanut butter or maybe a combo of the two. Thank you so much!!!

Really? Well, goody. At least you have a starting point. Also, graham + butter + brown sugar will

taste "butterscotchy" without having any tangible "butterscotch" ingredient, like chips.
