Need some advise making Mabel Hoffman's Slow-Cooker Cassoulet from T&T and Christmas Eve dinner

I am very excite because this Sunday my stepmom, 1 of my younger sisters and her step daughters are all coming over to try our hand at making gingerbread houses. ( My first attempt at these, EVER. Say prayers, LOL) We are also going to go look at Christmas lights too. Which means I am going to need to provide dinner. This recipe seems easy and simple but delicous. I like the fact you can cook in a crockpot too. But I need advise from those who have made this dish. Can I use boneless chicken thighs? Would 4 lbs of boneless chicken thighs feed more then 6 people? Oh is 4 lbs of chicken thighs to much for this recipe? Many thanks in advance.

I also can use a very simple but delicous crockpot or one dish meal for Christmas Eve. I unfortuneately need to be careful on the recipe I choose cause I will be feeding only my hubby's family this year and they are very simple eaters. Not to mention picky eaters. But I need to find something easy and simple since our family is participating in the children church serve at 5 pm on Christmas Eve. Everyone will be coming over right after the service to eat at my house. Any ideas and help will be much appreciated and welcomed. Thank you in advance for saving my Christmas Eve from me being bald (from trying to figure this out) and not being to stressed out to enjoy anything.

 
Mercy, two pounds of boneless chicken thighs should be enough...

that should be plenty since there is also sausage and bacon in the recipe.

For Christmas Eve, many years ago we started having traditional Texas food that could primarily be prepared in advance. I always use the Rocky Mountain Brisket from T&T, baked beans, and cole slaw. I will post those recipes for you to see. Good luck and don't stress!!

 
Have fun making the gingerbread house. For Christmas ever, how about

chili or some kind of stew/hearty soup in the crockpot? Maybe served with cornbread or biscuits made in advance, and a nice fresh salad.

We're having take-home lasagna, and if you have a BJ's in your area, it's excellent if you like lasagna, and I would very much recommend it.

BJs is like a Sams right? Do you have to be a member to shop there? I think there is 1 here in Tampa

 
If you have a rice cooker, teriyaki meatballs keep well in the crockpot and are quick and easy.

 
Or just simple Italian beef sandwiches. make the roast the day ahead, slice and then warm the next

day in the crockpot with au juice.

 
another goodie is beef stroganof---keep warm then add sour cream before serving. serve with noodles

or even rice.

 
It's a club membership, but yes, it's like Sam's and Costco I think.

Lots of times they have free 2-week trial memberships, especially around this time of year.

We'd plan on attending a Christmas concert tonight too :eek:( but luckinly THAT's cancelled till next week. "It's beginning to look a lot like Christmas, everywhere you look!"

Easy Beef Stroganoff

Canola oil spray
1 medium onion, chopped
2 cloves garlic, chopped
1 1/2 cups mushrooms, sliced
14 ounces lean beef eye of round or sirloin, thinly sliced
1/2 cup low-sodium beef broth
1 tablespoon flour
1/2 cup frozen peas
1 cup light sour cream
3 cups cooked noodles
1 teaspoon dill
dash salt or pepper

Spray large pan with oil. Brown onion, garlic, mushrooms, and beef slices.

Add broth to pan and stir in flour until well- mixed. Bring to a boil and add peas. Turn off heat. Make sure the broth isn't boiling when you add the sour cream or it will separate; when cooled slightly, stir in sour cream.

Serve over noodles, garnishing with dill if you'd like.

 
just love this---a favorite comfort food. sounds weird, but my Mom served it w/rice sometimes. we

had rice so rarely---meat and potatoes German food---but the occasional servings of rice with gulash or stroganof were a treat.

I made plain ole beef and noodles a couple of weeks ago and you should have heard my husband moan and groan! He really enjoyed it! Would have made Stroganof but was out of sour cream and it was COLD out so no store run for me that day!smileys/smile.gif

Chinese sounds good for tonight! I'm still up to my ears in unbaked cookie dough. why do I do this?

 
Me, too, Ang! My fridge is full! lol

I don't have to get it all baked, though. I'll bake as much as I have time for and need and either take the rest to my daughter's house to do there or freeze it. It's always so nice to have dough in the freezer later!

I'm beginning to panic a bit...but I have a few things that are important to me to do and I will just do what I can, and take the rest with me to do as I can.

What doesn't get done doesn't need to be done! smileys/smile.gif

It's taken me years to get to this point!!

Mark, I've made this countless times and you need more than two lbs of chicken for 6 people

I have a large crockpot and when I use boneless/skinless chicken I use about 3 lbs of chicken in this dish. Even though the crockpot is covered the chicken shrinks. Yes, there is sausage- yes, bacon too but not enough to make up for the smaller amount of chicken.

Note here: bone-in chicken makes a more flavorful final result but I often use boneless chicken because the crockpot fills up to the top due to the extra bulk of the bones.
