i'm a bit of a nigella lawson fan and have accumulated a number of her books. i reluctantly tried this recipe when suffering a serious chocolate craving - these have become a fave. only thing is they don't keep so well as the cream cheese gets a bit rubbery the next day, so might be best to make for a group and devour the same day, or make a smaller portion. hope someone enjoys this!
125g dark chocolate
125g unsalted butter
2 lg eggs
200g superfine sugar
1 tsp vanilla
75 g plain flour
pinch salt
200g fridge-cold solid cream cheese
melt chocolate and butter over med-low heat in heavy saucepan. in meantime, gently beat eggs, sugar and vanilla. measure flour and salt into another bowl. remove choc from heat when smooth, cool slightly then beat in eggs/sugar. add flour/salt and beat till smooth. pour half the batter into 9x9 lined pan. slice cream cheese thinly and lay ontop of the batter. top with remaining batter, then bake @ 180c for 20 min till top pale and dry (cake tester will come out sticky). cool x 10 min and cut into squares.
