New poster - have a question about waffles

Hello everyone! I have lurked for ages but never posted. I have very much enjoyed the comaraderie here. I had an impulse to buy a Belgian-style waffle maker and am looking for good recipes. Something that comes out nice and crispy, that's worth all the calories! Any suggestions? I will very much appreciate it!

here is a recipe for Michael in Phoenix' Dad's Buttermilk Waffles that everyone has raved about.
One thing I do with my waffle iron, and I do not remember where I got the tip from, is make French toast in my waffle iron. I prepare as you normally do, then cook it in the waffle iron.
Here is Michael's recipe:

"Our favorite waffle recipe. We've tweaked it over the years to suit our taste.

We like them with sliced bananas, sliced fresh strawberries (in season, tossed with a bit of sugar), whipped cream and milk chocolate chips. Wow!

Dad's Buttermilk Waffles

2 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
4 tablespoons sugar
1/2 teaspoon salt
1 1/2 cups buttermilk
2 teaspoons vanilla extract
3 eggs, lightly beaten
1/2 cup melted butter, slightly cooled

Sift together dry ingredients.

Stir vanilla into buttermilk.

Add buttermilk, eggs and the melted butter to the dry ingredients.

Mix well, until no lumps remain. The batter will be thick.

Ladle into pre-heated waffle iron.

Makes 6 to 8 8" round waffles. Great in Belgian waffle makers too.

Hello, glad you decided to come out of lurkdom! I don't have a T&T, but here are two recipes with

great reviews. The first one is made with yeast, the second one is without.

 
Well, might I suggest the Waring Pro Begian Waffle Maker!?

I certainly LOVE mine!! I do waffles made out of gingerbread cake mix topped with hot apples or pears.....Yum!.....

Crispy Waffles


Amount Measure Ingredient -- Preparation Method

1 package yeast
1/2 cup warm water
2 cups warm milk
1/2 cup butter -- melted
1 teaspoon sugar
1 teaspoon salt
2 cups flour
2 large eggs
1/4 teaspoon baking soda

Combine yeast and 1/2 cup warm water in a glass measuring cup; let mixture stand 5 minutes.

Combine yeast mixture, milk, and next 3 ingredients in a large mixing bowl. Add flour, stirring until smooth. Cover and refrigerate 8 hours.

Whisk in eggs and baking soda.

Baking in a preheated, oiled waffle iron until crisp. (about 4 minutes)

NOTES : Nice and crispy. Can be easily halved.

 
This is the recipe that came with my Belgian Waffle Iron

I find that this makes cripy waffles--I think the whipped egg whites help to make these crisp.

Belgian Waffles

4 eggs, separated
1/2 tsp. vanilla
3 Tbs. butter, melted
1 cup flour
1/2 tsp. salt
1 cup milk

Preheat waffle iron.

Beat egg yolks until light. Add vanilla and butter. Combine flour and salt. Stir in the milk and egg mixture. Beat egg whites until stiff and fold into batter.

Thoroughly grease preheated iron. (Wait until iron is hot before greasing.)

Put 1+1/2 cups batter into hot greased iron. Bake until you can see no more steem coming from iron.

For non-electric or stove top iron: Bake 45 seconds on first side; turn and bake approximately 10 minutes until it stops steaming and waffle is golden brown. I usually turn the iron back to the first side after 6 minutes and finish cooking the last 4 minutes or until it stops steaming. Do not open iron until steaming stops.

1&1/4 cups flour
2 tsp baking powder
1/2 tsp salt
2 egg yolks
1&1/2 cups milk
4 tbsp vegetable oil
2 egg whites

combine dry ingredients in a bowl. in separate bowl, beat egg yolks, stir in milk and oil, then mix into dry ingredients just until blended. beat egg whites till stiff but not dry and gently fold into the batter.
enjoy!
