New twist on Traca's Spicy Asian Soup

I made this Saturday when I was sick and since everything made me sick, I didn't eat much even though it was yummy. So DD got home from her birthday visit to Mississippi last night and had a bowl. I came home tonight and the 'broth' was missing out of one jar, you could see where she put the ladle down in the jar to press all of it out that she could.

So I made another quick batch of broth - chicken stock, soy sauce, lime juice, brown sugar, ginger and sriracha. Absolutely delicious! It has a great flavor all by itself. I can just about guarantee you that there will probably be a batch of the broth in our fridge at all times with DD around.

I wonder how noodles cooked in the broth would be? Delish, I'm guessing. smileys/smile.gif

I agree, any noodles would be good. I've used fresh chow mein noodles from...

...my asian market, and they were good, but we like the rice stick or cellophane noodles (like you get in a bowl of Pho) the best.

You can cook them on the side in boiling water and toss them with a bit of peanut oil or sesame oil once drained. They will keep in the fridge, tightly sealed, for days. Add them to the bottom of your bowl and ladle hot soup over the top.

Good stuff.

Michael
