(((carol))) and here's a little pasta salad that might be tempting...
It just might be all the stress that this situation is causing (that makes you lose your appetite)...if that is the case and since you requested a pasta salad...this is my take-off on Cathy's Creamy Pasta Salad:
Creative Pasta Salad
8 oz rotinni
One (15-1/2 oz) can garbanzo beans, drained, rinsed & drained again
Sliced Kalamata or black or green olives
Chopped red onions
Chopped or shredded carrots
Minced green, red, orange bell peppers (all--or whatever you have)
Chopped tomatoes, seeded and drained
Chopped radishes (1 or 2)
Chopped zucchini
Broccoli florets
2 Tbsps Italian parsley, chopped
Dressing:
Hellman's regular mayo (or 1/2 reg and 1/2 light)
Half and Half (or fat free half and half)
Garlic powder
Celery seeds
Freshly ground black pepper
Seasonal (just a little bit)
Sprinkle of dried red pepper flakes
Garnishes:
Slivered fresh basil leaves
Fresh marjoram, chopped
Cook pasta al dente; drain. Then cool it under cold water. Drain.
Prepare vegetables & place in large bowl. Blend dressing ingredients and fold into pasta. Taste to see if it needs additional seasong/herbs. Garnish. Serves 4.
I use whatever I have on hand in the crisper. IMO, the garbanzo beans (chick peas) are what really make this pasta salad so good - thanks Cathy Z!--Ann
