-made raspberry liqueur with vodka and cinnamon - couldn't wait 6 months for the brandied cherries, which was my first choice from a book I dragged out from my stash of books from used book sales

-made Joe's curried chicken thighs again - love it over steamed rice and now the whole house smells like anise :eek:)

-pancake breakfast at maple sugar house in the woods... early maple sugar season with the warm winter

-thinking about making maple crack (forgot the "official" name) from same book, above

Sunday Six

Dawn, that pancake breakfast at the house in the woods sounds like it could be the opening pages of a novel. How idyllic. smileys/smile.gif

1. Friends found a tiny but extremely good espresso place, called "Zibetto," very close to us, at 56th and 6th Ave. There are no seats, but the espresso and tiramisu are worth it. Walked around the park afterwards--it was crammed with people, thanks to the gorgeous weather.

2. Made poached salmon with lemon-jasmine rice and salad for lunch today.

3. Garlic-and-Dijon-rubbed pork tenderloin with kasha and steamed vegetables for yesterday's lunch...

4. Zucchini-and-Swiss omelet for dinner, last night, with homemade hummus and bits of baguette.

(I'm aware that 2, 3, and 4 sound incredibly boring.)

5. Trekked to Trader Joe's at 72nd and Broadway on Saturday afternoon. Insanity. However, their French baguette is much better than any other baguette around (except maybe Amy's Bread's baguette, but they're usually gone by noon), so it's worth it, once in a while. (Also: Valhrona 72% dark chocolate for $3.00.)

6. I can't think of a sixth... Maybe I could talk about my fatal attraction to bread. Every week, I swear that this is the week I'll really commit (again) to low-carb, and every Monday, I am gripped with real terror at the thought of having coffee without some bread item. It's a real problem, since I always have this stumbling block, and once I get past it, things go well, but I cannot get past it, right now. Anywho, there's number six. smileys/wink.gif

Friday evening we went with friends to check out a new Italian restaurant in town. It's 3 tables in the back of a gas station ($4.29/gallon). Surrounded by beer coolers we enjoyed pasta carbonera, spaghetti and meatballs, chicken parmasian and salmon. We finished with the best tiramisu any of us had every eaten.

Saturday we ate at a Filipino/Chimurra restaurant, enjoying lumpia, spam fried rice and pork adobo.

Today, after losing my hour and having the day go FAST, we went grocery shopping.

Then I fixed cowboy caviar to take with us to dinner at a friends where we will be enjoying homemade tacos. Big, greasy ones. I've had them before and they are awesome.

Yup...one weekend and probably a twenty pound weight gain...but it is SOOOOOOOOO worth it.

 
Weekend & REC: Beekman 1802 BLAAK Onion Jam

Mostly been playing around with the new vitamix. After an epic fail with too many greens at first, made a yummy green smoothie out of grapes, pineapple, banana, apple, spinach, and ice.

About a month ago ran across a free yr of MS magazine so signed up. Feb/March/April all just came at once! After a few minutes checking them out today I ran across Bacon–Blue Cheese Sandwiches - and wanted one! Right now! So this lead to me currently in the midst of making the onion jam to go with.

After cheating by chopping onions in the vitamix, heck I had to try it out didn't I? The onions are currently carmelizing as I type.

Update: Onion Jam almost done...my goodness it's yummy, but doesn't make much, it's looking to be about a jam jar's worth. I used yellow onions because that's what I had, might try sweet ones next time and for sure make more!

Beekman 1802 BLAAK Onion Jam

3 cups of hand chopped onions (chunky)
1 cup of balsamic vinegar
1/4 cup of real maple syrup
1 tbsp of butter

Salt & Pepper to taste

Carmelize onions in butter until tender and golden brown. Add salt & pepper to taste. Add balsamic vinegar and cook about an hour (or until vinegar thickens.) Add syrup and cook about another hour until mixture thickens. Place in a jar with a sealable lid and invert for 5 minutes to seal the jar. The jar has a shelf life of about a year. Once opened the mixture needs refrigeration.

Bacon–Blue Cheese Sandwiches

Ingredients

8 slices white or sourdough bread
6 ounces sweet onion jam
6 ounces blue cheese, sliced
6 slices Irish or Canadian bacon, cooked
Unsalted butter, for pan

Directions

Preheat oven to 300 degrees. Spread each of 4 bread slices with 2 tablespoons onion jam. Top each with a quarter of the cheese, 1 1/2 slices bacon, and 1 slice bread.

Melt 1 to 2 tablespoons butter on a griddle or in a heavy skillet over medium heat. Add sandwiches in batches, and cook until golden brown on both sides, about 6 minutes total, flipping once and adding more butter as needed. Transfer to a baking sheet, and bake until cheese is melted, about 5 minutes. Cut in halves or quarters, and serve hot.

weekend 6.....

- Replicated a dish I saw on a menu; arugula w/ dried figs, crumbled goat cheese and balsamic glaze. They served theirs w/ popcorn tossed w/ truffle oil. (Did not have the oil, so skipped it)

- Went to a St. Patricks day Parade...FUN!! (Happy that I could find a green sweater!) Beautiful weather for a parade!

- Made Traca's Spicy Chicken soup for my neighbor that is REALLY under the weather. (Love this recipe!)

- Thinking about what to do with remaining 1.5 lbs of chicken tenders that I did not use in the soup. Any ideas?

- I have come to realize that my family has become spoiled with my jam / jelly. (Not that it is that great, just that they will not go back to store brand!) FIL made Hungarian Pancakes for our Friday dinner, tried to serve some opened store jam in the fridge. Did not work. Was wondering where everyone was, table became quiet (empty). Realized they were in the garage looking for my jam!

- Have Spring Fever after the Tomato post above. While I would LOVE a good snow storm, I am excited about spring. Daffodils came up. Always puts a smile on my face.

- Frustrated about how much PAPER seems to get into the house. Not just the house, seems to come into the kitchen. Papers, advertisements, mail, magazines, etc...

Edited... I did 7!! Seriously, if you have ideas for chicken tenders would be great! Otherwise, they are heading to the freezer.

 
Weekend 6.....

1. Apple cake with graham flour from Good to the Grain, delicious cake, not very sweet and I like it a lot.

2. Hazelnut Muffins with teff flour from Good to the Grain. Love her recipes

3. did lots of studying on sourdough. Have a recipe from Peter Reinhart's Artisan Breads Every Day in the fridge to be baked on Tuesday

4. made King Arthur's rustic sourdough bread for the second time. While my bread turned out very tasty both times I have a couple of issues: not sour enough, crust is crispy by not flaky crispy, bread is fine texture, no holes. I have read that I need to feed the started the day before use to have time to develop a more sour flavor, tried that; less flour for a more open texture, tried that, spray bread dough when putting it into the oven and set a pan of hot water on the bottom shelf, tried that. Looking for me ideas.

5. made refrigerator pasta for dinner: whole wheat penne, one of the last containers of last summers pesto, can of artichoke hearts, handful of chopped cherry tomatoes, chunks of ricotta salata, and toasted walnuts.

6. spent hours raking and digging up green onions in a small corner of the back yard, hours and hours more to do........

 
Weekend six

1. Made another of those 6" cakes using 1 egg and 1/3 cake mix to channel The Birthday Cake at The Harrison restaurant. Baked it in a tall 6" springform and split into three layers:
Moistened with coke and simple syrup. Layer icing was peanut butter/thick canned coconut milk/hoison sauce and cayenne with a few Splendas to sweeten it. Top icing was silk tofu with 4 oz bar of melted Ghiradelli, a bit of coconut milk, a scoop of peanut butter and a few sweeteners, whizzed in a food processor.

2. Naan bread using the bread machine "dough" cycle. Na. Na. Still not there.

3. Faux-fried baked chicken breast...this turned out really well. It's an Ellie Krieger recipe with adaptation. Soaked chicken pieces in buttermilk, brushed with honey and coated with cornflakes, spices, almond slices and sesame, channeling the Mighty Cone in Austin.

4. Coddled eggs with Sunny Paris, crisp bacon and whole wheat soldiers.

5. Kale with garlic and onion, served with roasted cauliflower, lemon pesto and so-so Naan with garlic butter.

6. Peach pie with almond leather coating.

 
Weekend 1. For the third weekend in a row.

This was our THIRD weekend in a row where we spent the entire time searching Craigslist/dealerships/newspapers for a car for our daughter. I can't stand to do it again... when my youngest turns 16 I'm buying her a pony.

 
Right up my alley, but dh does not like coconut. I had to change my suntan lotion when we first

started dating. (I think it was called hawaiin tropics??) Anyway,
dh has a huge dislike for smell / taste / texture of coconuts. (poor guy, he is missing out! Love my almond joys!)

Maybe I can sub cream for the coconut milk?

weekend six

drove down to our cabin on Friday morning and had lunch at the Senior Center and re-connected with folks down there.

took out a mystery casserole from the freezer and it ended up being a nice stuffed cabbage casserole. good dinner with tossed salad and garlic toast

saturday lunch was homemade tomato soup and grilled cheese---more pantry and fridge cleanout. it was yum.

nice frozen salmon filet and stuffed acorn squash for dinner. just rubbed the salmon with a spice rub and pan fried it. simple and delish.

baked a cinnamon crumb cake using this cream cheese muffin recipe.http://tastykitchen.com/recipes/breads/cream-cheese-muffins-3/(added 1 tsp cinnamon to batter and topping) took to work, but seems a bit plain for them. I'm liking it---like a snickerdoodle coffeecake.

crock pot pulled pork with BBQ sauce on Sunday. I added some natural apple cider to wash out the BBQ bottle, and it is really lovely in the dish. this is out cooling on the back deck(-9 degrees this am)and we'll have it on Wednesday---DH works 3 12 hour days starting Sundays, so I prepared ahead.

here's a seven, watched the taped episodes of "Enlightenment"(Oh, I miss Downton Abby on Sunday nights!) to see what was what. it was a bit "dark" for me. finished about 4 Sudoku puzzles at the same time---I'm quite hooked, a latecomer to the Sudoku club.

 
barb, love your jam story. thanks for sharing. beware of using sweet onions in the jam----

they do cook up much sweeter than regular onions, so the balsamic and maple syrup may need to be adjusted. I made onion soup with sweet onions, just once, and we thought it was much too sweet. they also take forever to caramelize since they seem to let off more juices than regular onions and it takes that so long to cook off.
