ISO: Nobody's probably trolling tonight, but ISO an overnight banana muffin recipe. Want to mix it up

Maybe all muffins can be made overnight? I'm fearfully tired...

I usually use Aunt Holly's Banana Bread recipe from epicurious with just a couple tweaks. Maybe I can just go ahead and mix like normal and then bake tomorrow in muffin tins.

Went to my youngest daughter's volleyball game tonight and it was a smidgeon too much during recovery phase. Baby steps.

 
I think you'd need to mix the dry ingredients and prep the wet, then mix and bake in the am -

If you mix tonight for morning baking, the baking soda/powder will activate and lose it's oomph.

For months, I made 4 doz muffins every morning, kissing up for a job. I'd make up the batter, put it

in the muffin tins and cover it overnight, then bake 'em in the morning. Only thing I'd add in the AM was sanding sugar for the topping. Banana muffins will probably darken a bit but that shouldn't be a problem.

Got my equity card that way.

 
I ended up mixing it all and sticking in fridge... and THEN I checked back for answers

I just really can't stress how exhausted I am right this minute. I'll bake them in the morning. The kids are the target recipient, so even if they don't rise quite as high, they should still get eaten.

Report - worked just great! I did (luckily) read Steve's advice about getting the batter to room

temp in time. The muffins baked up beautiful and moist and were delicious warm from the oven.

Go forth and conquer school, girls!
