I like the orange in the brine and the orange oil. I'm doing a dry brine this year so I'll add the

zest and do the oil. Thanks, Gay! And then I reread the recipe and realized this is a dry brine. Sheesh learn how to read, Sherman!

It makes perfect sense to me. Since I have spatchcocked chicken, but never a turkey, this will be fun.
I also like what he says about the dry brine, something I have not done because soaking a turkey in a tub of water did not make sense to me. Kenji explains about the added water in the turkey as it soaks it up, and THAT made sense. So dry brine it is going to be this year.

 
Yep, I like grilling whole, bone-in turkey breasts in the summer, and we never serve gravy with it

usually a salad and fresh fruits of some sort for a light summer meal. I know, I know, a whole turkey is a lot different and this is almost winter after all smileys/wink.gif

 
Karen, I am thinking about it....I usually make gravy and if I don't I know there will be complaints

With reference to the dry brine I have done a dry brine on chicken recipes and love it......

 
Ummm, well, yes,of course. I'm talking about Thanksgiving!! Have to have gravy!! DD loves gravy

so much I have served her some in a wine glass as joke!!.
