...for July 4th. I made two and gave one to the neighbors. They loved it!

I got the recipe a dear friend of ours. She and my wife have been friends since childhood. It is simply called "Hawaiian Cake", and I'm gonna take a wild guess and say it is called that because there is crushed pineapple on top.

Basically a yellow cake with frosting made from instant pudding, milk, cream cheese and Cool Whip. Sprinkle toasted coconut, sliced almonds and pineapple on top and you've really got something!

What lucky neighbors! Can you please post the frosting rec.

I am thinking it would work for strawberry shortcake, which is a huge hit in our home. I'm always trying different rec for flavor, technique, make ahead, etc...

Here's the whole recipe. Very convenient, if you use box cake mix. Even better from scratch.

Hawaiian Cake

1 box Yellow Cake Mix (plus ingredients needed to prepare)
1 large Instant Vanilla Pudding
1 cup milk
8 oz. cream cheese, softened
1 tub Cool Whip
1 can (14 oz, or less, to taste) crushed pineapple, well drained
1 cup sweetened flaked coconut, toasted
1/2 cup sliced almonds

Follow cake mix directions, cool.

In large bowl, mix vanilla pudding and milk, beat slightly. Add cream cheese and cool whip. Beat just until smooth.

Spread mixture on cake layers. Sprinkle pineapple, coconut and almonds.

Keep cake refrigerated.

Enjoy!

Exactly. The frosting is divine. Not too sweet, and very creamy. Pairs really well...

...with the yellow cake and the coconut/pineapple/almonds.

I've usually had this cake at family gatherings involving our friend. It is standard fare, and her family has several really fine cooks. They usually serve it as a sheet cake, in a 13x9 inch pan.

Next time I'm going to put some of the garnish in between the two layers, along with the frosting.

Michael, you could have seen the lightbulb actually shine over my head the day I realized "Gayle"

was the same "Gayle" as "Gayle's Pineapple Cake."
