RECIPE: Not-so-quick, but easy and good side dish or light lunch. Rec: Chicken-Pasta Salad

I had some cooked tri-color pasta and wanted to make something a little more substantial than just tossing it with an oil and vinegar dressing.

1 lb tri-color spiral pasta

About 1/2 lb chicken that I marinated overnight in Parmesan salad dressing

1/4 cup or to-taste mayonnaise

1/4 cup olive oil

salt and black pepper to taste

1 tomato, chopped

2-3 Tbs sliced black olives (I just used some olive paste)

1/2 - 3/4 cup Parmesan cheese, shredded

2 cloves garlic, sliced thinly

Marinate chicken pieces overnight or at least 4 hours in refrigerator. Cook chicken (I used a crockpot, but any prep is fine); cook pasta until done.

Combine other ingredients and toss with pasta and bite-sized chicken pieces. So good, and easy to pack for a lunch on the go, too.

 
This sounds great Dawn. I wanted to make something

different for the market tomorrow and this fills the bill. I have a can of artichoke heart quarter that I think I will add to this. I have a lot of tapanade to use up. I will let you know how it sells.

Glad to post it. Yes, it was one of those dishes that after you eat it, you say

"Did I really make this?!" and "I wonder if I can replicate it". hahah
