Not sure why, but uninspired... Any suggestions for an appetizer for a tea group?

At a cute tea shop in ABQ, I had grilled shimp on top of parmesan nests with a bit of greens.

It was pretty simple. The nests were made using a mini-muffin (tassie) pan with large grated parmesan and baked...they ended up lacey. I've never made this...perhaps they nest another pan inside to keep the shape?

Shrimp was grilled and napped with a lemon remoulade.

Greens weren't dressed because of the shrimp sauce.

All very simple to prep ahead and tasty for a 2-bite appetizer.

 
How about the Layered Lemon Mousse posted above only using strawberries

which as so good right now? Seems like that would be perfect with tea.

 
How about Frittata Bites with Chard, Sausage and Feta. Great morning, noon, night or

in between.
Attractive and delicious
Can be made vegetarian
Good warm or room temp
They transport well
Can be made ahead and reheated
They go well with coffee, tea, juice or cocktails
Frittata bites (any recipe).....they're not for everyone or every situation but can sometimes be the perfect appetizer smileys/smile.gif

I made some bigger "nests" with parm, first frying it in flat circles then shaping over custard cups

while still warm and pliable. could shape inside of muffin tins too. quite easy to work with. the rounds can be baked in the oven too
