Not T&T...yet: Cheat's Yoghurt & White Chocolate Crème Brûlée

I'm reading a new book: Modern Baking by Donna Hay (Australian baker extraordinaire) and the book is divided into sections:

chocolate

caramel, toffee and coffee

sugar and spice

fruit and berries

milk and cream

Each section has lovely photographed recipes, followed by a smaller section of quickie or cheat recipes...usually 3-4 ingredients tops to simulate a familiar dessert.

The one I'm going to try is her rift on Crème Brûlée. Now my benchmark is pretty high for this: its CI's version with 4 cups of heavy cream and 12 egg yolks. Ya...they could have just called it Crème Brûlée Cholesterol Plug, but it's perfect.

CI's version is approximately 550 calories per serving (and requires a bain marie cooking method) while Hay's yoghurt-based one is 350 calories and gets popped in the refrigerator. I just bought Fage (full fat) whole yogurt and Lindt white chocolate bar to try it out (that last one was a bugger to find). However I'm dealing with an upset stomach right now so I'll hold off testing until I feel better.

180 grams white chocolate, finely chopped

1.5 C (420 grams) Greek-style (thick) yogurt

1 tsp vanilla

white (granulated) sugar for sprinkling and caramelizing.

Melt the chocolate with 1/2 cup of the yogurt. Allow to cool for 2 minutes. Fold in the rest of the yogurt and divide into four 1/2 C ramekins. Refrigerate for at least an hour.

Right before serving, sprinkle with sugar and torch until sugar melts and turns golden.

I believe that I've made a Donna Hay recipe before

or at least her name is very familiar. So I Googled and found these 27 favorite recipes on Epi. Haven't made any of these, yet, but they all sound tasty/interesting/possible.

well...the good news is that it *looks* like the real thing. On the other hand...

it in NO WAY tastes like silky, luscious, custardy Crème Brûlée.

The other good news is I prepped half the recipe which made three servings (rather than two), thereby reducing the calories to HALF the amount of one serving of silky, luscious, custardy Crème Brûlée.

The other, other good news is that it tastes like a high-quality, ever-so-slightly gritty, vanilla yogurt. You know, the flavor profile you always THINK you're going to taste when you buy one that says "vanilla yogurt" but that NEVER lives up to your expectations.

This one does.

It does NOT, however, live up to CI's silky, luscious, custardy Crème Brûlée.

RESULT: I cannot recommend this as a substitute for Crème Brûlée, but will defend it as very good vanilla yogurt.

PS: ...and to be honest, the Brûlée part--as much as it ramps of the drama--simply added unwanted sweetness (although I loved breaking through that crust).
