Not to make it all about me, but just had to say: I just made/canned jam - without pectin: Ta-DA!

Niether, I just winged it (!) and used a frozen plate to test. It was actually

easy to do by feel and then start testing. I tested after 15 mins, but could feel it wasn't quite ready and I was right. A couple more minutes and it set-up perfect.

Thanks SO much for everyone's help. I felt like you were all looking over my shoulder.

I think the canning is a bit more of a pain because I'm still using a stock pot which is really too small. I did get a Ball kit that has a plastic insert for the pot so not dealing with the towel anymore.

However, I'm having lots of fun!!! Now what else should I can for the holidays???
