I have a used copy of "Mrs. Wilkes' Boardinghouse Cookbook" from Savannah, GA
Got it at the library booksale just for the fried chicken recipe...the key to Mrs. Wilkes success.
Sadly, while the rest of the book is filled with interesting recipes, the one for chicken is basically:
chicken
flour
salt
pepper
Fry.
I may be paraphrasing a bit, but there were no secret ingredients, no soaking hints, nothing to lead someone like myself who can't fry to save her soul to make excellent fried chicken.
