Ouch is right. My mandolin scares me to death. I ALWAYS use the finger guard.

It can be a pain to use it sometimes but not the pain you are feeling now.

 
Even with the guard I am careful, I've had the guard flip out of my hand once

The special glove is a good safety measure.

 
OW!!!!! The absolute BEST thing for burns to stop pain and prevent scarring...

As soon as it happens, smear with egg white. I've done it so many times and told everyone about this. There's a whole science behind it, don't care, just that it really works.

Leave it on and let it dry. Do it a second time if needed.

 
Huh- never knew that cheese. Will try it next burn- there always is a next one in the kitchen!

 
It probably would be best to beat it with a fork a little first. Still going to be slippery.

 
The potatoes were too small and I got distracted. I will try to reserve the mandoline for

larger items or those with a "handle: such as the jalapenos I slice for quick pickled slices. Almost impossible to use the guard for them. One of the guys in the Whole Foods meat dept here uses one of the special gloves. However, he left it on when waiting on customers. Doesn't seem very sanitary to me.
