Made tonight. I forgot to add the cornstarch to the creme fraiche/egg mixture but it didn't matter much - would have been smoother with it. I gilded the lily and added some grated swiss to the top a few minutes before I took it out. Would also be really nice to add some nice brown sauteed sliced onion right before you pour the custard over it. It forms a really yummy crusty brown bottom. I think there is too much custard to fry them Richard.

It is very rich. The custard covered up the individual dumplings and sets so you just spoon it out of the gratin dish.
