Oatmeal Pie

I was talking with an old friend from East Tennessee and she mentioned that she had been craving an Oatmeal Pie. I have never heard of an Oatmeal Pie so I ask her for the recipe. Here is what she sent.

Cream together :2/3 cup sugar

1 stick butter

Add and beat well 2 eggs

Stir in : 2/3 cup dark corn syrup

2/3 cups uncooked rolled oats

1 tsp. vanilla

Pour mixture into unbaked nine inch pie shell.Bake at 325 about 40 minutes.

I haven't made this yet, but will soon just to see what it is like. She says it reminds her of a Pecan Pie.

Oh yeah, these are DELISH! One of those comfort food things, I guess.

Throw a handful of choc. chips in the bottom before pouring in the filling for a variation.

 
According to one of my books, came about as a sub for pecan pie when pecans were too

dear or unavailable. Sort of a poor man's pecan pie, that took off on it's own. Kind of like vinegar pie was a substitute for lemon pie when lemons were unavailable or too expensive. Our ancestors were an inventive lot, were they not?

 
Okay, I've got to admit the name's not too appealing. I was thinking along the lines of

lumpy porridge gruel ala Olive Twist in the poor house.

But the ingredients sound fine...and the concept seems so easy. I'll check out the points and perhaps give this one a try.
