oh boy...local librarian is retiring. I asked how many folks were going to say goodbye and was told

"...we know 7 people so far." (So I thought I'd do a fancy layer cake.)

I checked again last Saturday and now it was 12-14 people. (okay...turn that into cupcakes)

I just got an email saying 56 people have signed up.

(ah...ah...maybe mni-cheesecakes (mini-muffin pan) with lemon curd or sweet sour cream or fruit filling on top?)

I'm totally screwed if this doubles again because it's next Wednesday (a work day) and so is Tuesday and I was just going to bake...whatever...and hand it off for Larry to take in.

Oh...what if the guest list grows exponentially! Like my thighs!

 
Or a selection of cookies. I'm sure yours are the best they will ever have tasted.

 
Cookies popped into my mind as well. I say, make it easy on yourself, Mar!! Whatever

you make will be delicious and well received.

 
You could always do a special gift just for the librarian--maybe a small round cake wrapped up.

 
If you've never made the A Cote Caramel Brownie recipe Pat gave me this is a great opportunity.

The recipe is for a half sheet pans of brownies. I recently made 2 batches for a for a dessert table at large event. These were the hit of the party, easy to make, and delicious.

Note: I always line the bottom of the pan with a parchment sling so they're easier to get out and cut. (Spray with Pam.)

Also, I follow the restaurant's lead and trim the edges for even, consistent pieces. (I keep the trim in my freezer for snacking!)

Ah, and I usually buy the caramel sauce. I have a Whole Foods near me and they sell it out of their bakery or on their dessert bar.

Costco yellow sheetcake with cheesecake filling - send Larry

Go ahead and bake the treats you wanted to make and bring the sheetcake as a back up if the numbers keep climbing, which I expect will happen. Costco will be happy to write something nice on top for you if you pre-order and pick up Tuesday or Wednesday.

It tastes best if the cake is allowed to warm to room temp. You won't have any trouble getting rid of the leftovers smileys/wink.gif Colleen

 
Thanks for all the suggestions! I stopped by on Saturday and the FIRST words

from the volunteers at the book sale were: "we always look forward to your treats!"

It is apparent I can be bought with a smile and a compliment.

Since they were donating their time on Saturday, I gave them the choice from the three bulk options above:
**mini-cheesecake
**caramel brownies
**sheet or bundt cake.

Both opted for the cheesecake option, so we now have a concensus. I'm making 72 mini (tassie size) and not going to worry about # of guests after that.

BTW, I really liked how ALLRECIPES let me scale the recipe UP to match my serving size.
