oh bugger....what can I bake a one-banana loaf of bread in when I have no pans?

here are some ideas

1) cast iron skillet
2) dutch oven without the top
3) casserole dish
4) muffin, cake or pie tins
5) you're an engineer. could you make one with some aluminum foil MacGyver?

 
More ideas: If'n the batter is thick you can try cooking in/on a griddle or fryin pan . . .

try scoops of batter (again, if thick). OR try small scoops in cupcake wrapper/cups (paper kind, if you have them) set on a cookie sheet. Or try scoops put on a well greased cookie sheet--leave lots of room to see how much they will spread.

Ramekins, heat proof mugs/stoneware. You could try wide-mouth canning jars, or use greased wide-mouth canning rings to contain your batter in a smaller space on a cookie sheet, griddle or frying pan; muffinn rings would work to do this as well (and metal cookie cutters too).

Banana bread batter as big thick pancakes? Sounds good to me.

 
Or if you just don't want to deal with it, smash the banana and freeze in a Zip Lock bag

 
Marilyn, if you can, could you post the recipe the 1-banana-fits-in-a can recipe? (more). . .

And please, what size was the can--28 oz or so? Thank you.

 
Way to think outside the box! Way back in the last century I had a bread recipe that was baked in

a coffee can. Tasted good to me back then. Haven't made it in years.

 
mistral, the recipe is at the link in my first post. It was a 14.5 oz can. The banana was ~5 inch.

Baked for 40-45 minutes. Seriously buttered and floured the tin first.
Oh, just realized I had no chocolate chips so that's why I had less batter than 2 cups.
