you said you used half candied orange peel and half candied lemon -- did you candy those yourself? Can I buy them in my market? Do you want what other candied fruit is traditional for torrone?

I'm making this for an elderly Italian lady and want to get it right!

Oh, and Michael Chiarello's recipe says to fold in half of the sliced almonds, then sprinkle the rest on top but in his video online, he just sprinkles some on top. Is one way more correct than the other?

Made both Chiarello's and Emeril's recipes. Both very good. Emeril's

nearly blew out my KA mixer, though. I made my own candied peels but if you can find a good one, buy it. We don't have it available locally.

I folded half in and sprinkled half on top. Don't know if MC says to use rice paper but I didn't.
