The children and grandchildren are descending tomorrow for Sunday dinner at Opa’s.

Can you not see the steaming platters of roast pork, kartoffknödeln, rotkraut, und apfelsturdel??

Austrian cooking adventure with a bunch of women here. I'm seriously considering just having each person making one of your recipes and bringing them over to share with all for a sit-down dinner together. Never done anything like that before but how else am I going to get to this collection of your recipes?

Sunday Bavarian Feast Day at Haus Richard....

The menu:

6-hour herb crusted pork roast marinated and basted with Bavarian beer.

Pretzel dumplings

Pork gravy

Green beans

Roasted fall tomatoes

garden salad

Krautsalat with bacon dressing

Chocolate Pecan Pie

Cathy, re the dumplings...

I made a lighter mixture to experiment, much more sloppy than I normally make it, shaped them, tossed them in the pot and they held together fine and were amazing light as a feather. Really amazing dumplings. I used about 1/2 pound of cubed soft pretzels, 3 eggs and 1/2 cup cream with salt, pepper, lemon zest, mace, and allspice. Napped with roast pork cream gravy and all were swooning.

My wonderful friend Richard, I would love to try to make these dumplings and love that you "lightened" them. I am working two jobs, 80 hrs/wk and just cannot imagine making soft pretzels to make dumplings with. We cannot get lovely soft pretzels here. I have made them and know they are wonderful but just not now I cannot I pull it off. I will have to stick with bread for now. I adore you and thank you for your lovely info.

 
I'd never had one either Erin.

Maybe they're a seasonal for Oktoberfest or a new twist? I'm sure I would have noticed and ordered one on previous visits to be sure. They are so much better than the semmelknödel.

 
Whole Foods has some (not terribly authentic) Bavarian pretzels... Maybe I'll have to try mini-

dumplings with one of those... Do you have good access to soft pretzels? I'm jealous. smileys/smile.gif
