Ok, I have too many spices/herb/etc jars. Need to pare down. What is your core list...

of favorites and must have on hand?

So far I have found 4 jars of ginger (3 ground/ 1 crystal) and 3 big ones of cayenne pepper. Sheesh! Also, I can't recall the last time I made fish besides salmon, but I have a big can of Old Bay Seasoning. Why do I need this?

What are your must have on hand favorites?

I just went through my spice/herb pantry and cleaned a lot out that was outdated.

Since I started buying from Penzey's, I use more of them now. They give free samples in small bottles, and those were clogging up my spice racks, so I moved them to the pantry, put them on their sides in rows so I can read them. All my spices and herbs are in alphabetical order so I can find them quickly.

Mostly I use, garlic salt and powder, Turkish Oregano, Cumin, Herbs de Provence, Tarragon, Himalayan Sea Salt, freshly ground, a blend of four peppercorns, freshly ground, Fox Point Seasoning and various spice blends from Penzey;s I like to play around with. Chipotle, Adobo, and Ancho chili powders are big too. I use many more, but these are the ones that come to my not yet awake brain.

I bought it for Meryl, and an entire bag of chocolate stuff I can't eat, and well...it hadn't yet been sent. smileys/frown.gif

Mrs Dash/spicy or regular for a quick spark of herbs. I've been using the Bavarian blend a lot from Spice house and will re-order soon.
