OK, I'm keeping the knife sharpener- Can i sharpen a Santoku?

Mine has the three stations, the last one (#3) being "strop/polish"- Directions say that for a serrated blade, skip the first two and go directly to #3- Would this be the same for the Santoku?

It's a Henckel, and while its not serrated, it DOES have those oval indents near the edge- Or, would I sharpen it like any other knife, using #1 and #2 first????

Hi Tammy - you can sharpen a hollow ground Santoku, but......

Knives with a hollow ground edge can be sharpened, however, the Santoku knife is different from the regular knives, in that the blade is thinner, and the bevel at the cutting edge is more acute.

The bevel of a German-style knife is 18º; the Japanese-style knives, like the Santoku, is 15º.

Chef's Choice actually has an Asian electric sharpener, designed for these knives. I already have a Chef's Choice like yours, and I'd hate to have to get another one for my Santoku knives (I have two - a hollow ground Wusthof Grand Prix, and a non-hollow-ground Shun Classic).

I've been keeping the edge by using my honing steel pretty regularly, but I'm not sure what I'm going to do when I really need it to be sharpened.

Might have to learn to use that shapening stone I have in the drawer.....
